牛里脊350克、青辣椒6个、生抽2勺、蚝油1勺、料酒1勺、淀粉2勺、芝麻油2勺、清水5勺、盐1勺、蒜泥适量

牛肉片,先加生抽1勺,蚝油,料酒,盐,抓均匀,再加5勺清水(清水分5次加,每次抓上浆了再加下一次)再加淀粉2勺,抓匀,最后加芝麻油2勺,(加芝麻油可以锁住的牛肉的水份,保证牛肉的嫩)

用的是菜籽油(菜籽油要等到冒烟以后,再放牛肉片),倒入牛肉片快速滑炒,
