豆腐一块、青蒜苗50克、泡椒泡姜30克、蒜两瓣、豆瓣酱两勺、猪瘦肉50克、香芹少许

备好所有食材,猪肉另外解冻中

豆腐切方块,猪肉剁成肉末,蒜苗、香芹切段,大蒜拍破或切片备用

炒锅下菜油烧至七成热,油量比平时炒菜多2倍左右,转中火,放入豆腐煎至两面金黄

煎好豆腐捞出备用

炒锅油重新转大火,下豆瓣酱炒香放入肉末,蒜煸炒1-2分钟

加入泡椒泡姜末继续翻炒至肉末金黄,加入少许生抽,清水少许

加入煎好的豆腐,蒜苗头,少许香芹,大火烧开中火煮3-5分钟
