用工具将生蚝外壳撬开,并把生蚝壳里的汁水倒入碗中;这可不是什么脏的海水,是精华;生蚝最鲜的就是它了;接着将生蚝的半个外壳冲洗一下摆在盘子里

接下来将蒜头、生姜、香葱和青红椒,分别切末备用;海鲜是大凉的,除了蒜蓉外再加点姜米可祛寒暖胃

在泡好清净的粉丝上倒些蒸鱼豉油抓拌均匀,然后在碗中加入:食盐,白糖,料酒,蚝油、清水,蒸鱼豉油及生蚝汁搅拌均匀

把拌好的粉丝铺在生蚝壳上,再把蚝肉放上面

现在来炒蒜蓉:炒锅烧至微微热,倒些食用油,下入姜米和2/3蒜末

用小火煸炒至颜色变黄,且能闻到浓浓的蒜香味,这时再放入剩下的1/3蒜末和碗汁,转中火炒至浓稠即可

然后用小勺将蒜蓉汁,均匀地浇在每个生蚝上面;等蒸锅中水烧开后,放入生蚝大火蒸5-6分钟
