将买回来的新鲜鸡杂剥去外膜和杂质,用盐、香油、生粉搓洗,再用清水冲洗干净,并沥干水份待用

姜切末,蒜剁碎,小米椒、尖椒、泡椒切圈

锅中入水,水开后鸡胗入锅掉水两分钟

掉水的鸡胗微凉后切成粒或者喜欢的花形,调入料油、香油、生抽、蚝油、生粉搅拌均匀,腌制半小时

热锅倒油,油热以后,放入姜蒜,爆香

爆炒的时候要注意不要炒太长时间,而且火要大,这样才能保证鸡胗脆脆的口感
