食材:
鸡脯肉300克、淀粉1勺、糖1/2小勺、生抽1勺、盐适量、姜5g、大蒜2瓣、干花椒20粒左右、线椒5个、小米椒或美人椒4个、食用油100g(实际50g)、胡椒粉少许
步骤1:
将鸡脯肉切丁,姜切未,大蒜切片,青红椒切圈

步骤2:
鸡丁中放少许盐,生抽,料酒,胡椒粉,少许植物油抓匀腌制10分钟,放入干淀粉抓匀

步骤3:
炒锅放油,稍多些,加点至6,7成热放入鸡丁煎炸(或是油温4成热滑炒鸡丁变色盛出)

炸至金黄捞出控油

留少许底油,放入姜,蒜,干花椒爆香,放入一半青椒和1/3的红椒圈炒出辣味

放入鸡丁慢炒,约3分钟左右,再放入余下青红椒圈翻炒1分钟,加生抽,少许糖或味精调味关火
