食材:
草鱼一条(3斤左右)、酸菜250g、干辣椒4只、花椒1小勺、蒜3瓣、姜5片、蛋清一1个、料酒一1勺、白胡椒粉适量、盐2勺、淀粉3小勺、葱3棵、泡椒5个
步骤1:
鱼片用淀粉,胡椒粉,蛋清,油,盐伴匀待用

步骤2:
炒锅内放入150克食用油烧至150℃,放入蒜,泡椒,酸菜翻炒,炒香后乘出

步骤3:
放油姜爆香后放入鱼骨,煎至2两面金黄加入料酒,加入1升水煮3分钟左右

酸菜鱼汤大火煮沸

加入鱼片(鱼片摊开后不要动,大火煮至鱼片变白关火马上捞出,大概一分钟左右)
