牛腱切块,冷水下锅?姜片?料酒焯水后洗净备用

砂锅放入少量油,一大块冰糖

炒至冰糖融化,变成这样焦糖色

下入牛腱裹糖色,然后下姜蒜翻炒片(期间可以盖盖焖5-10秒,这一步十分去腥)

另起一锅冷水,放入香叶、八角、桂皮、花椒、辣椒,煮开后小火煮5-10分钟

将煮好的香料水倒入砂锅,煮至沸腾后,中小火卤1小时左右

关火冷却,牛肉在里面浸泡2-3小时(过夜更好)

牛肉浸泡好之后拿出来沥干水分,可以切片食用,也可以切块用保鲜袋装好放入冷冻室,每次吃之前拿出来解冻切片即可)
